At Thymeless Dining, we are passionate about providing our customers with a unique dining experience. Born to a southern Italian family and brought up in long island, New York, Gino was inspired by years of traditions and culture. Discovering his true passion, he entered the kitchen.
Chef Gino began to pursue the culinary arts and attended the Culinary Institute of America in Hyde Park, NY. Following graduation, he moved to Florida and helped open Beacon Restaurant with Chef Jordan Lerman. During this time he focused on honing his craft. As he returned to NYC, he began work at Ai Fiori under chef Michael White. Gino learned pasta making and perfecting intricacies. Exploring new cuisines he made his way to Le Coucou, a one star Michelin Restaurant where he endeavored into classical French cuisine and enhanced his creativity. After finding a love for French cuisine he went on to working for Daniel Boulud at Centurion Amex black card members club. Here he worked as a tournant and junior Sous Chef maintaining the standard of excellence. Before entering the private sector he recently worked at Ilis in Brooklyn under chef Mads Refslund, co-founder of Noma in Greenpoint, Brooklyn Gino gained experience in fusing Japanese and French cuisine.
Learning to make misos, garums and fermenting all foraged vegetables, Chef Gino used all of his experience and entered the private sector of dining, bringing the flare and experience of a restaurant to your home.
